The Sidestroke Cocktail

The color of this summery cocktail may just induce a wanderlust to swim away to bluer oceans.

Elle Heath shares her recipe for a cocktail fueled with thirst quenching coconut water and bursting with flavors of pineapple and mint.

The Sidestroke Cocktail

My two favorite things about summer are long days soaking up the beach and the deliciously bright flavors that are in season. Doesn't that sound a bit like a cliche dating app bio?
It's true though! Hand me a freshly opened coconut and lets float in the ocean if you want to wooo my heart. In honor of being in the thick of summer, I wanted to create a cocktail that perfectly embodied what I love so much about the season. The Sidestroke is just that. Careful though, the color of this cocktail may induce a wanderlust to swim away to bluer oceans. May I suggest using The Sidestroke swimsuit to get you there?

 - 4 oz Coconut Water
 - 2 oz Pineapple Juice
 - 1.5 oz Aged or Dark Rum
 - 0.25 oz Honey
 - 0.25 oz Blue Curaçao
 - 2 Sprigs of Mint
 - 1 Slice of Lime

Step 1.0

You'll want to start by muddling together a slice of lime, two sprigs of mint and the honey in a lowball glass. Muddle until the juice releases from the lime and you can smell the aromatics of the mint.

Step 2.0

Add in your dark rum & pineapple juice. Stir until the honey has dissolved into the rum and pineapple juice. Fill your glass with ice.

Step 3.0

Fill the rest of your glass up with the coconut water and blue curaçao. Give it one final stir before serving.
