What screams summer more than a glass of icy cold rosé wine?
Watermelon, that’s what. The two are definitely tied for first in my book for summery things I look forward to all winter long. And now that the season is here and in full effect (yay!), I’m making a cocktail to celebrate!
These rosé and watermelon sunshine spritzers come together SO simply and are SO refreshing and delicious, I’m confident they’ll make it into your regular summer cocktail rotation.
It all starts with watermelon ice cubes. Yup. It’s a thing. Simply scoop out (or slice!) watermelon and line up on a baking sheet or plate. I usually do about ½ cup of watermelon balls/cubes per cocktail. Pop in the freezer for an hour or until frozen.
Whisk together your drink ingredients! I like to ensure that all ingredients are VERY COLD before mixing. Into the mix for two cocktails goes 1 cup of dry rosé wine, the juice of 1 orange, the juice of 2 limes, and 2 tablespoons of St. Germaine elderflower liqueur. Taste your mix, and if it’s too tart for you, whisk in a touch of honey or agave nectar.
Assembly! Place your watermelon ice cubes into two tall glasses and divide the rosé wine mixture between the two glasses. Top each glass off with a healthy splash (roughly ¼ cup per glass) of watermelon-flavored seltzer (other fruit flavors work here too if you can’t find watermelon).
Garnish with fresh citrus slices and mint sprigs and you are good to go! These are destined to be poolside. Just sayin’.
